What are you hunting for and what with? Bow hunting in deep woods and scoped rifles on the Plains are obviously completely different. I live in the Southern USA swamps and find 6x or 8x compacts with good low-light glass work well. I use 10x when hunting the open. I'll let the hunters in the other environments comment on their area. One other thing-don't go cheap. You don't have to go with Zeiss or Swarovski. Nikons or Bushnells will do just fine. Just optics are one place that you really get what you pay for. You can hand the good ones down to your grandchildren. I handled a pair of WWII German Zeiss binos and they were wonderful. I just didn't have the money.
Figure out what range you are hunting and you will answer your own question. A good pair of binos can be found in the youth section at most sporting goods stores. Those may not be enough magnification for your long range purposes, but those damned things are really hard to break and only cost about $20 or so. Just make sure those youth binos that you pick up are actual functioning binoculars and not the pretend kind. I still have the same pair I got as a kid and they work perfectly fine up to and well over a hundred yards.
